- 4 large russet potatoes, peeled
- 1 small onion
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
- Optional toppings: sour cream, applesauce, chopped chives
- Shred potatoes and onions with a grater or meals processor. Wrap them in a towel and squeeze out excess liquid.
- In a bowl, combine the grated potatoes and onions with eggs, flour, salt, and pepper.
- Mix till blended. Heat oil in a skillet on medium-excessive warmness. It should be hot but no longer burning.
- Gently drop spoonfuls of potato mixture into hot oil. Press down with the returned of a spoon to flatten into discs.
- Cook latkes in batches, frying for two-3 mins per aspect, or till golden and crispy. Use a slotted spatula to dispose of latkes from oil and drain them on paper towels to remove excess oil.
