Whether served as a side dish or enjoyed on their own, these flavorful veggies are sure to delight your taste buds! 

Ingredients:
- 1 medium-sized butternut squash, peeled, seeded, and cut into cubes
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a small bowl, whisk together the maple syrup, olive oil, ground cinnamon, ground nutmeg, and a pinch of salt.
3. Place the cubed butternut squash in a large mixing bowl.
4. Pour the maple syrup mixture over the squash and toss until the squash is evenly coated.
5. Spread the squash cubes out in a single layer on the prepared baking sheet.
6. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, stirring halfway through.
7. Once roasted, remove the squash from the oven and transfer to a serving dish.
8. Garnish with chopped fresh parsley, if desired.
