Ingredients:
- 1/4 pound bacon, sliced into 1/2-inch strips
- 3 cloves garlic, minced
- 1/2 cup dry white wine
- 1 1/2 cups canned crushed tomatoes (one 16-ounce can)
- 1 cup bottled clam juice
- 3/4 pound chopped clams, drained (about 1 1/2 cups)
- 1/3 cup chopped fresh parsley
- 3/4 teaspoon salt (adjust to taste)
- 1/4 teaspoon dried red pepper flakes
- 3/4 pound linguine
- In a large stainless-steel frying pan, cook bacon over moderate heat until almost crisp. Remove bacon with a slotted spoon and leave 2 tablespoons of fat in the pan.
- Reduce heat to moderately low. Add garlic and cook, stirring, for 30 seconds. Pour in the wine, then add bacon, crushed tomatoes, and clam juice. Bring to a simmer and cook, partially covered, for 10 minutes.
- Add clams, parsley, salt, and red pepper flakes. Simmer for 30 seconds longer, being careful not to overcook the clams.
- Meanwhile, cook linguine in a large pot of boiling salted water until just done, about 12 minutes. Drain and return pasta to the pot.
