Hey everyone! I thought Iād share my go-to recipe for Lumpiang Sariwa (Fresh Spring Rolls). Itās a family favorite and honestly, making the peanut sauce from scratch is so worth it. Iād love to hear if you have any tweaks or tips!

- 1 cup shrimp, peeled and diced (optional, or swap with tofu for veggie lovers!)
- 1 cup carrots, julienned
- 1 cup sweet potatoes, diced
- 2 cups cabbage, shredded
- 1 cup green beans, sliced thin
- 1 cup bean sprouts
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 tbsp soy sauce
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 cup water
- 2 eggs
- Pinch of salt
- 1 tbsp oil
- 1/2 cup peanut butter (or finely ground roasted peanuts)
- 2 cups water
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tbsp cornstarch dissolved in 1/4 cup water
- Crushed peanuts
- Fresh lettuce leaves
- Make the filling: In a pan, sautƩ garlic and onion in a little oil. Add shrimp (or tofu) and cook until done. Toss in the vegetables, soy sauce, salt, and pepper. Stir-fry until just tender but still crisp. Set aside.
- Prepare the crepe wrappers: Mix flour, water, eggs, salt, and oil until smooth. Heat a lightly oiled pan, pour a thin layer of batter, and cook like you would a crepe. Repeat until the batter is gone.
- Make the peanut sauce: Combine peanut butter, water, soy sauce, and sugar in a pot. Simmer while stirring. Add the dissolved cornstarch and keep stirring until it thickens. Adjust to taste!
- Assemble the lumpia: Place a lettuce leaf on a wrapper, add the filling, and roll it up like a burrito. Drizzle with peanut sauce and sprinkle crushed peanuts on top.
