Ingredients:
  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • Optional: 1/2 cup diced ham or cooked chicken for added protein (optional)
  • Optional: 1/2 cup diced cheddar cheese
  • Optional: 2 hard-boiled eggs, chopped, for garnish
Instructions:
  1. Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a large mixing bowl, whisk together the mayonnaise, white vinegar, Dijon mustard, sugar, salt, and pepper until well combined.
  3. Add the cooked and cooled macaroni to the bowl with the dressing. Stir to coat the macaroni evenly.
  4. Add the chopped celery, red bell pepper, red onion, and parsley to the bowl. If using, add the diced ham or cooked chicken and diced cheddar cheese as well. Mix everything together until well combined.
  5. Taste and adjust seasoning with salt and pepper if needed.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  7. Before serving, give the macaroni salad a good stir. If desired, garnish with chopped hard-boiled eggs.
  8. Serve chilled and enjoy your homemade macaroni salad!
