Ingredients:

For the Coconut Rice:

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 1 cup water
  • 2 pandan leaves (optional, for fragrance)
  • 1 teaspoon salt
For the Sambal:

  • 10 dried red chilies, soaked in hot water and deseeded
  • 3 cloves garlic
  • 2 shallots
  • 1 tablespoon dried shrimp, soaked in hot water (optional)
  • 1 tablespoon tamarind pulp, soaked in hot water
  • 2 tablespoons vegetable oil
  • 2 tablespoons sugar
  • Salt, to taste
For the Accompaniments:

  • Fried anchovies (ikan bilis)
  • Roasted peanuts
  • Sliced cucumber
  • Boiled or fried eggs
Instructions:

  1. Prepare the Coconut Rice:
    • Rinse the jasmine rice under cold water until the water runs clear. Drain well.
    • In a rice cooker or a pot, combine the rinsed rice, coconut milk, water, pandan leaves (if using), and salt. Cook according to the rice cooker instructions or bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed. Fluff the rice with a fork and remove the pandan leaves before serving.
  2. Make the Sambal:
    • In a blender or food processor, combine soaked and deseeded dried red chilies, garlic, shallots, soaked dried shrimp (if using), tamarind pulp, sugar, and salt. Blend until smooth.
    • Heat vegetable oil in a skillet or wok over medium heat. Add the blended chili paste and cook, stirring constantly, until the mixture is fragrant and the oil starts to separate from the paste, about 10-15 minutes. Adjust the seasoning with more sugar or salt if needed. Remove from heat and set aside.
  3. Prepare the Accompaniments:
    • Fry the anchovies (ikan bilis) in hot oil until crispy. Drain on paper towels.
    • Roast the peanuts in a dry skillet until golden brown and fragrant.
    • Slice the cucumber and boil or fry the eggs according to your preference.
