I recently made Malaysian Satay, and it was an absolute delight! These skewers of marinated meat are grilled to perfection and served with a rich and flavorful peanut sauce. Perfect as an appetizer or a main dish, this recipe is a must-try! Here’s how you can make it at home:
Ingredients:
For the Satay Marinade:
- 1 lb (450g) chicken, beef, or lamb, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon honey or brown sugar
- 1 tablespoon curry powder
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- Salt and pepper, to taste
For the Peanut Sauce:
- 1 cup smooth peanut butter
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1 teaspoon red chili paste or sambal oelek (adjust for spice)
- Water, as needed to thin the sauce
For Serving:
- Cucumber, sliced (optional)
- Red onion, sliced (optional)
- Steamed rice or rice cakes (optional)
Instructions:
1. Marinate the Meat:
- In a large bowl, combine the soy sauce, vegetable oil, honey (or brown sugar), curry powder, minced garlic, cumin, coriander, turmeric, salt, and pepper.
- Add the meat pieces and mix well to coat. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.
2. Prepare the Peanut Sauce:
- In a saucepan over medium heat, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and red chili paste.
- Stir well until smooth and heated through. If the sauce is too thick, add water a little at a time until you reach your desired consistency. Remove from heat and set aside.
3. Skewer the Meat:
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the marinated meat onto the skewers, leaving a little space between each piece.
4. Grill the Satay:
- Preheat your grill or grill pan over medium-high heat.
- Grill the skewers for about 5-7 minutes on each side, or until the meat is cooked through and has nice grill marks.
5. Serve:
- Serve the satay hot, drizzled with peanut sauce. You can also serve additional peanut sauce on the side for dipping.
- Garnish with cucumber and red onion slices, and enjoy with steamed rice or rice cakes if desired.
