Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 ripe mangoes, peeled and diced
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, and ground cinnamon.
3. In a separate bowl, mash the diced mangoes with a fork or potato masher until smooth.
4. Add granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract to the mashed mangoes. Mix until well combined.
5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
6. Fold in the chopped nuts, if using.
7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the mango bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
10. Slice, serve, and savor every moist and fruity bite!
