Directions:
- Prepare the Chicken: If you don’t have cooked chicken on hand, you can quickly cook the chicken breasts in a pan with a bit of olive oil, salt, and pepper until fully cooked. Let it cool, then shred it into pieces.
- Make the Salad: In a large bowl, combine the diced mangoes, shredded chicken, avocado, red bell pepper, red onion, and cilantro. If you like a bit of heat, you can add the finely chopped jalapeño.
- Dress the Salad: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour this dressing over the salad and gently toss to combine everything well.
- Serve: Arrange the mixed greens or lettuce on a serving platter or individual plates, then top with the mango chicken mixture.
