Very Soft Mango Recipe!


Ingredients:
- 1 cup mochiko (sweet rice flour)
- 1/4 cup granulated sugar
- 3/4 cup water
- 1 ripe mango, peeled and diced into small pieces
- Cornstarch or potato starch, for dusting
Instructions:
- Prepare the Mango:
- Peel the ripe mango and dice it into small pieces. Set aside.
- Make the Mochi Dough:
- In a microwave-safe bowl, combine the mochiko, granulated sugar, and water. Stir until smooth and well combined.
- Cover the bowl loosely with plastic wrap.
- Microwave the Mochi Dough:
- Microwave the mochi dough mixture on high for 2 minutes.
- Carefully remove the bowl from the microwave and stir the mixture with a spoon. It should start to come together and become sticky.
- Continue Cooking the Mochi Dough:
- Return the bowl to the microwave and microwave for an additional 1-2 minutes until the dough is fully cooked and has a slightly translucent appearance.
- Form the Mochi:
- Dust a clean work surface with cornstarch or potato starch to prevent sticking.
- Transfer the cooked mochi dough to the dusted surface.
- While the dough is still warm, knead it gently until smooth.
- Assemble the Mango Mochi:
- Divide the mochi dough into small portions, about the size of a tablespoon.
- Flatten each portion of dough with your hands and place a piece of diced mango in the center.
- Wrap the mochi dough around the mango to enclose it completely, shaping it into a smooth ball.
- Repeat with the remaining dough and mango pieces.
- Serve:
- Serve the mango mochi immediately or store them in an airtight container in the refrigerator.
