Ingredients:
  • 2 ripe mangoes, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon honey (optional, for added sweetness)
  • Salt and pepper, to taste
Instructions:
  1. Begin by preparing all the ingredients. Peel and dice the ripe mangoes, dice the red bell pepper, finely chop the red onion, mince the jalapeño pepper (remove seeds for less heat if desired), and chop the fresh cilantro.
  2. In a large mixing bowl, combine the diced mangoes, diced red bell pepper, chopped red onion, minced jalapeño pepper, and chopped cilantro. Toss gently to mix everything together evenly.
  3. Squeeze the juice of two limes over the mango mixture. The lime juice adds a refreshing tanginess to the salsa and helps to enhance the flavors of the other ingredients.
  4. If you prefer a sweeter salsa, you can add a tablespoon of honey to the mixture. This will complement the natural sweetness of the mangoes and balance out the acidity from the lime juice.
  5. Season the mango salsa with salt and pepper to taste. Start with a small amount and adjust according to your preference. Remember, you can always add more seasoning later, so start conservatively.
