If you want a light meal and a good side dish!

Ingredients
- 2 lbs (about 1 kg) potatoes (Yukon Gold or Russet work well)
- 1/2 cup milk (or cream for extra richness)
- 1/4 cup unsalted butter
- Salt, to taste
- Pepper, to taste
- Optional: garlic powder or fresh garlic, minced (for flavor)
- Optional: chopped chives or parsley (for garnish)
Instructions
- Prepare the Potatoes:
- Peel the potatoes and cut them into even-sized chunks (about 1-2 inches). This helps them cook evenly.
- Boil the Potatoes:
- Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 15-20 minutes or until the potatoes are tender (a fork should easily pierce them).
- Drain the Potatoes:
- Once cooked, drain the potatoes well in a colander. Return them to the pot to allow any excess moisture to evaporate.
- Mash the Potatoes:
- Use a potato masher, ricer, or fork to mash the potatoes to your desired consistency.
- Add Butter and Milk:
- While the potatoes are still warm, add the butter and milk. Stir until the butter is melted and everything is well combined. If you prefer a creamier texture, add more milk as needed.
- Season:
- Season with salt, pepper, and garlic powder or fresh garlic, if desired. Mix well to incorporate the flavors.
- Serve:
- Transfer the mashed potatoes to a serving bowl. Garnish with chopped chives or parsley, if using. Serve warm.
