These delightful treats bring together the flavors of traditional Japanese dorayaki with a modern twist of matcha green tea. They're perfect for satisfying your sweet cravings with a touch of elegance and flair.

- 1 cup all-purpose f1 teaspoon baking powder
- 2 tablespoons matcha green tea powder
- 2 large eggs
- 1/2 cup granulated sugar
- 1/4 cup milk
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- Sweetened red bean paste (store-bought or homemade)
Instructions:
- In a mixing bowl, sift together the all-purpose flour, baking powder, and matcha green tea powder.
- In another bowl, whisk together the eggs and granulated sugar until light and fluffy.
- Add the milk, honey, and vanilla extract to the egg mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a smooth batter forms. Let the batter rest for about 10 minutes.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.
- Spoon about 2 tablespoons of batter onto the skillet to form each dorayaki pancake. Cook for about 2 minutes, or until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown on both sides.
- Remove the cooked dorayaki pancakes from the skillet and let them cool slightly.
- Spread a layer of sweetened red bean paste onto the bottom side of one pancake, then top with another pancake to form a sandwich.
- Repeat with the remaining pancakes and red bean paste.
- Serve your delicious Matcha Dorayaki and enjoy!
