- 2 lbs (about 1 kg) tripe (cleaned and cut into small pieces)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 1 can (14 oz) hominy (drained and rinsed)
- 2 tomatoes (diced)
- 1 jalapeño pepper (diced, optional for heat)
- 1 bay leaf
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Lime wedges, chopped cilantro, and sliced radishes for serving
- In a large pot, combine the tripe, diced onion, minced garlic, bay leaf, oregano, cumin, and enough water to cover everything.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 2-3 hours or until the tripe is tender.
- Once the tripe is tender, add the diced tomatoes, jalapeño pepper (if using), and drained hominy to the pot.
- Continue to simmer the soup for another 30 minutes to allow the flavors to meld together.
- Season the menudo with salt and pepper to taste.
- Serve the menudo hot, garnished with lime wedges, chopped cilantro, and sliced radishes on the side. Enjoy with warm tortillas or crusty bread.
