- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- Fresh cilantro, chopped, for garnish
- Lime wedges, for serving
- Toast the Noodles:
- Heat the vegetable oil in a large pot over medium heat. Add the fideo noodles and toast them, stirring frequently, until they are golden brown and fragrant, about 3-4 minutes. Be careful not to burn them.
- Saute the Aromatics:
- Add the chopped onion to the pot and sauté until translucent, about 2-3 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
