Try this Mexican dish I just discovered!


Ingredients:
- 4 cups shredded cabbage (green or a mix of green and purple cabbage)
- 1 cup shredded carrots
- 1/2 cup thinly sliced red onion
- 1/2 cup chopped fresh cilantro
- 1 jalapeño, seeded and finely chopped (optional, for heat)
- 1/4 cup fresh lime juice (about 2-3 limes)
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- 1/4 cup crumbled queso fresco or feta cheese (optional, for garnish)
Instructions:
- Prepare the Vegetables:
- In a large bowl, combine the shredded cabbage, shredded carrots, sliced red onion, chopped cilantro, and chopped jalapeño (if using). Toss well to combine.
- Make the Dressing:
- In a small bowl, whisk together the lime juice, olive oil, honey or maple syrup (if using), ground cumin, chili powder, salt, and pepper.
- Combine and Toss:
- Pour the dressing over the cabbage mixture. Toss everything together until the vegetables are evenly coated with the dressing.
- Chill:
- Cover the bowl with plastic wrap or transfer the slaw to a sealed container. Refrigerate for at least 30 minutes to allow the flavors to meld and the vegetables to slightly soften.
- Serve:
- Before serving, give the slaw a final toss. Taste and adjust seasoning if needed. Optionally, sprinkle crumbled queso fresco or feta cheese on top for added flavor and texture.

- Serve the Mexican slaw chilled as a side dish or as a topping for tacos, burritos, grilled meats, or any other Mexican-inspired dishes.
Tips:
- Customize the Heat: Adjust the amount of jalapeño according to your spice preference. You can also leave it out if you prefer a mild slaw.
- Make Ahead: This slaw can be made ahead of time. It actually tastes even better after marinating in the dressing for a few hours in the refrigerator.
- Variations: Feel free to add other ingredients like sliced bell peppers, cherry tomatoes, or avocado to customize the slaw to your liking.
