Hey everyone! I've begun making sopes recently, and they're quickly becoming a favorite. These thick, corn-based discs topped with beans, meat, and vegetables are both tasty!

- 2 cups masa harina
- 1 1/4 cups water
- Pinch of salt
- 1/2 cup refried beans
- 1 cup cooked, shredded meat (like chicken or beef)
- Shredded lettuce, diced tomatoes, crumbled cheese, and sour cream for topping
- In a bowl, mix masa harina, water, and salt to form a dough. Divide into small balls.
- Flatten each ball into a thick disk and cook on a hot griddle for 2-3 minutes per side until slightly golden.
- While still warm, pinch the edges of each disk to form a raised border.
- Spread refried beans over the sopes, then top with shredded meat and desired toppings.
