Mexican Street Corn

Hi everyone! I’ve been making Mexican Street Corn, or elote, and it’s always a crowd-pleaser at BBQs and family gatherings. It’s a delicious way to enjoy corn on the cob with a flavorful twist!

Ingredients:
  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 tablespoon chopped cilantro
  • 1 lime, cut into wedges
Instructions:

  1. Grill the corn over medium heat until charred and cooked through, about 10-15 minutes.
  2. In a small bowl, mix together the mayonnaise and sour cream.
  3. Spread the mayo-sour cream mixture over each ear of grilled corn.
  4. Sprinkle with cotija cheese, chili powder, and cilantro.
  5. Serve with lime wedges for squeezing over the top.
