Hi everyone! I’ve been making Mexican Street Corn, or elote, and it’s always a crowd-pleaser at BBQs and family gatherings. It’s a delicious way to enjoy corn on the cob with a flavorful twist!

- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 teaspoon chili powder
- 1 tablespoon chopped cilantro
- 1 lime, cut into wedges
- Grill the corn over medium heat until charred and cooked through, about 10-15 minutes.
- In a small bowl, mix together the mayonnaise and sour cream.
- Spread the mayo-sour cream mixture over each ear of grilled corn.
- Sprinkle with cotija cheese, chili powder, and cilantro.
- Serve with lime wedges for squeezing over the top.
