Ingredients:
  • 2 (4 ounce) salmon fillets
  • Salt and ground black pepper, to taste
  • 2 tablespoons butter, divided
  • 1 clove garlic, minced
  • 1/2 cup heavy cream
  • 2 teaspoons Meyer lemon juice
  • 1/4 teaspoon dried dill weed
Directions:
  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a skillet over medium-high heat, melt 1 tablespoon of butter. Cook the salmon fillets, skin side-up, until golden brown, about 5 to 7 minutes. Flip the salmon and continue cooking until the skin is slightly browned and the fish flakes easily with a fork, about 5 minutes more.
  3. In a saucepan, melt the remaining 1 tablespoon of butter. Add the minced garlic and cook for 1 minute.
  4. Pour in the heavy cream and stir constantly for about 2 minutes, until the cream is heated through.
  5. Add the Meyer lemon juice and dried dill weed to the cream sauce. Be careful not to let the sauce break; stir gently until combined.
  6. Serve the lemon cream sauce over the cooked salmon fillets.

Though, if you're watching your dairy intake, you could try substituting cream with coconut milk for a dairy-free alternative that still gives a creamy texture. 🥥
