I'm happy to share one of my favorite dessert recipes for those with a sweet tooth. It's called Milk 'N' Cookies Icebox Cake, a no-bake dessert that combines the comforting flavors of milk and cookies with a creamy twist. It’s layered, indulgent, and perfect for sharing!
Enjoy this playful and nostalgic treat that’s perfect for kids and adults alike!
Ingredients:
For the Cake:
- 2 cups (480 ml) cold milk (any kind, dairy or non-dairy)
- 1 package (15-20 cookies, about 300 g) chocolate chip cookies (store-bought or homemade)
- 2 cups (480 ml) heavy whipping cream
- 1/4 cup (30 g) powdered sugar
- 1 tsp vanilla extract
For the Topping (optional):
- Mini chocolate chips or crushed cookies
- Chocolate sauce or caramel drizzle
- Whipped cream dollops
Instructions:
1. Prepare the Whipped Cream:
- In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
- Set aside in the refrigerator while you assemble the cake.
2. Dip the Cookies:
- Pour the cold milk into a shallow bowl.
- Dip each cookie into the milk for 2-3 seconds (don’t oversoak), ensuring they’re slightly softened but not falling apart.
3. Assemble the Layers:
- In a rectangular or round dish (e.g., 9x9 inch or similar size), spread a thin layer of whipped cream on the bottom to prevent sticking.
- Arrange a single layer of milk-dipped cookies over the whipped cream, filling gaps by breaking cookies if needed.
- Spread a generous layer of whipped cream over the cookies.
- Repeat the layers—cookies, then whipped cream—until all cookies are used, finishing with a whipped cream layer on top.
4. Chill to Set:
- Cover the dish with plastic wrap or foil and refrigerate for at least 6 hours, or overnight. This allows the cookies to soften and meld with the cream.
5. Decorate and Serve:
- Just before serving, sprinkle the top with mini chocolate chips, crushed cookies, or a drizzle of chocolate sauce or caramel.
- Slice into squares or wedges and serve chilled.
Tips:
- Cookie Options: Use any cookies you like—Oreos, peanut butter cookies, or even gingersnaps for a twist.
- Flavor Variations: Add a layer of Nutella, peanut butter, or caramel between the cookies for extra flavor.
- Make Ahead: This dessert tastes even better the next day as the cookies fully soften and flavors meld.
