  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup small pasta (such as macaroni or ditalini)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)
Instructions:
  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.
  2. Add the carrots, celery, zucchini, and green beans to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the diced tomatoes and vegetable broth. Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Add the cannellini beans and pasta to the pot. Cook until the pasta is tender, about 10 minutes.
  5. Stir in the Italian seasoning, and season with salt and pepper to taste.
  6. Ladle the soup into bowls and garnish with fresh parsley. Serve hot, optionally topped with grated Parmesan cheese.
