- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed and chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup small pasta (such as macaroni or ditalini)
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.
- Add the carrots, celery, zucchini, and green beans to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the diced tomatoes and vegetable broth. Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Add the cannellini beans and pasta to the pot. Cook until the pasta is tender, about 10 minutes.
- Stir in the Italian seasoning, and season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley. Serve hot, optionally topped with grated Parmesan cheese.
