Ingredients:
- 2 cups all-purpose flour
- ½ cup white sugar
- 2 tablespoons brown sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 egg
- 1 ¼ cups milk
- ⅓ cup vegetable oil
- 2 teaspoons vanilla extract
- ¾ cup mini chocolate chips
Instructions:
- Preheat the oven to 400°F (200°C). Grease a 24-cup mini muffin pan or line it with mini muffin liners.
- In a large bowl, mix together the flour, white sugar, brown sugar, baking powder, and salt.
- In a separate bowl, lightly beat the egg. Stir in the milk, vegetable oil, and vanilla extract.
- Combine the egg mixture with the flour mixture until fully incorporated.
- Fold in the mini chocolate chips.
- Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
- Bake for approximately 10 minutes or until the tops spring back when lightly pressed.
