- 8 slices of streaky bacon
- 2 tablespoons (30g) miso paste
- 2 tablespoons plain flour
- 1 cup (250ml) milk
- 4 small flatbreads
- 2 eggs, fried
- Black sesame seeds and coriander leaves, for garnish
- Preheat the oven to 220Β°C (425Β°F). In a large frying pan over medium heat, cook the bacon until crispy, about 4-5 minutes. Remove the bacon and drain on paper towels, reserving 2 tablespoons of the bacon fat.
- To make the miso bΓ©chamel sauce, heat the reserved bacon fat in a saucepan over medium heat. Stir in the miso paste and flour, cooking for 1-2 minutes. Gradually whisk in the milk until smooth. Cook for another 3-4 minutes until thickened. Remove from heat and let it cool slightly.
- Assemble the sandwiches: Spread one-quarter of the bΓ©chamel sauce over a flatbread, then top with 2 bacon slices. Place another flatbread on top, followed by more bacon and bΓ©chamel. Repeat to make 2 sandwiches.
- Place the assembled sandwiches on a baking paper-lined tray and bake for 10 minutes or until golden and bubbly.
