  • 4 green plantains
  • 4 cloves of garlic, minced
  • 1/4 cup of olive oil
  • Salt to taste
  • Optional: cooked pork, chicken, or shrimp for filling
Instructions:
  1. Peel the plantains and cut them into 1-inch chunks.
  2. In a pot of boiling water, cook the plantains until tender, about 10-15 minutes.
  3. Drain the plantains and mash them with a potato masher or fork until smooth.
  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
  5. Add the mashed plantains to the skillet and stir to combine with the garlic-infused oil. Cook for another 2-3 minutes, stirring occasionally.
  6. Season with salt to taste.
  7. Optional: Form the mofongo into balls and make a well in the center to add your choice of cooked pork, chicken, or shrimp.

    Serve hot and enjoy your delicious mofongo!
