- 4 green plantains
- 4 cloves of garlic, minced
- 1/4 cup of olive oil
- Salt to taste
- Optional: cooked pork, chicken, or shrimp for filling
- Peel the plantains and cut them into 1-inch chunks.
- In a pot of boiling water, cook the plantains until tender, about 10-15 minutes.
- Drain the plantains and mash them with a potato masher or fork until smooth.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
- Add the mashed plantains to the skillet and stir to combine with the garlic-infused oil. Cook for another 2-3 minutes, stirring occasionally.
- Season with salt to taste.
- Optional: Form the mofongo into balls and make a well in the center to add your choice of cooked pork, chicken, or shrimp.
