Ingredients:
- 500g pork belly, cut into bite-sized pieces
- 3-4 cloves garlic, minced
- 2-3 shallots, thinly sliced
- 1/4 cup soy sauce
- 1/4 cup oyster sauce
- 2 tablespoons palm sugar (or brown sugar)
- 1 tablespoon dark soy sauce (for color, optional)
- 1 tablespoon fish sauce
- 1 cup water or chicken broth
- Vegetable oil, for cooking
- Fresh cilantro leaves, for garnish
- Sliced green onions, for garnish
Instructions:
- Prepare the Pork:
- In a large pan or wok, heat a bit of vegetable oil over medium-high heat.
- Add minced garlic and thinly sliced shallots. Sauté until fragrant and lightly browned.
- Braise the Pork:
- Add pork belly pieces to the pan and cook until they start to brown on all sides.
- Make the Sauce:
- In a bowl, mix together soy sauce, oyster sauce, palm sugar, dark soy sauce (if using), and fish sauce until well combined.
- Pour the sauce mixture over the pork belly in the pan. Stir to coat the pork evenly.
- Simmer:
- Add water or chicken broth to the pan, enough to cover the pork belly.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the pork is tender and the sauce has thickened. Stir occasionally to prevent sticking.
- Serve:
- Once the pork is tender and the sauce has reduced to a thick consistency, remove from heat.
- Transfer Moo Hong to a serving dish. Garnish with fresh cilantro leaves and sliced green onions.
