Mung Bean Stew

Ingredients:​

  • 1 cup dried mung beans, rinsed and soaked for at least 1 hour
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1-2 green chilies, chopped (optional)
  • 2 medium tomatoes, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon salt (adjust to taste)
  • 4 cups vegetable broth or water
  • 2 cups chopped spinach or kale (optional)
  • Fresh cilantro, chopped (for garnish)
  • Lemon or lime wedges (for serving)

Instructions:​

  1. Prepare the Mung Beans:
    • Drain and rinse the soaked mung beans.
  2. Sauté the Aromatics:
    • In a large pot, heat the vegetable oil over medium heat.
    • Add the chopped onions and sauté until they become translucent, about 5 minutes.
    • Stir in the minced garlic, ginger, and green chilies (if using). Cook for another 2 minutes until fragrant.
  3. Add the Spices:
    • Add the turmeric, cumin, coriander, and garam masala to the pot. Stir well to coat the onions and spices evenly.
  4. Cook the Tomatoes:
    • Add the chopped tomatoes to the pot. Cook until the tomatoes soften and start to break down, about 5 minutes.
  5. Simmer the Stew:
    • Add the soaked mung beans and vegetable broth (or water) to the pot. Stir to combine.
    • Bring the mixture to a boil, then reduce the heat to low and let it simmer. Cover the pot and cook until the mung beans are tender, about 30-40 minutes. Stir occasionally to prevent sticking.
  6. Add Greens (Optional):
    • If using spinach or kale, stir them into the stew during the last 10 minutes of cooking. Cook until the greens are wilted and tender.
  7. Season and Serve:
    • Taste the stew and adjust the salt if needed.
    • Serve hot, garnished with fresh cilantro and a squeeze of lemon or lime juice.

Tips:​

  • For a thicker stew, mash some of the mung beans with the back of a spoon.
  • This stew pairs well with rice, flatbread, or a simple salad.
  • You can customize the vegetables and spices based on your preference.
