🛒 Ingredients:

For the Pork:​

  • 500g pork loin or pork shoulder, thinly sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon ground white pepper
  • Vegetable oil, for grilling

For the Dressing:​

  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon roasted rice powder (khao khua)
  • 1-2 teaspoons chili flakes, adjust to taste
  • 2-3 shallots, thinly sliced
  • 2-3 green onions, thinly sliced
  • Handful of fresh cilantro, chopped
  • Handful of fresh mint leaves, chopped
  • Handful of fresh basil leaves, chopped

Optional:​

  • Roasted rice powder (khao khua) for garnish
  • Sliced cucumber and lettuce leaves, for serving

🥗 Instructions:

  1. Prepare the Pork:
    • In a bowl, combine thinly sliced pork with fish sauce, soy sauce, sugar, and ground white pepper. Mix well to coat the pork. Let it marinate for at least 30 minutes.
  2. Grill the Pork:
    • Heat a grill pan or grill over medium-high heat. Lightly brush with vegetable oil.
    • Grill the marinated pork slices for 2-3 minutes on each side, or until cooked through and nicely charred. Remove from heat and let it rest for a few minutes.
  3. Make the Dressing:
    • In a mixing bowl, whisk together fish sauce, lime juice, roasted rice powder, and chili flakes until well combined.
    • Add thinly sliced shallots, green onions, chopped cilantro, mint leaves, and basil leaves to the dressing. Mix gently to combine.
  4. Slice and Toss:
    • Slice the grilled pork into thin strips and add it to the dressing mixture. Toss gently to coat the pork with the dressing.
  5. Serve:
    • Transfer Nam Tok Moo to a serving plate.
    • Garnish with additional roasted rice powder if desired.
    • Serve with sliced cucumber, lettuce leaves, and sticky rice or jasmine rice on the side.
