- 2 cups jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1 pandan leaf (optional)
- Salt to taste
For the Sambal (Spicy Chili Paste):
- 10 dried red chilies, soaked in hot water and deseeded
- 3 shallots
- 3 cloves garlic
- 1 tablespoon dried shrimp, soaked in hot water (optional)
- 2 tablespoons tamarind pulp, soaked in 1/4 cup water
- 2 tablespoons palm sugar or brown sugar
- Salt to taste
For the Accompaniments:
- Hard-boiled eggs, halved
- Cucumber slices
- Fried anchovies (ikan bilis)
- Fried peanuts
- Sliced fresh tomatoes
- Sliced fresh cucumbers
- Fried chicken or fish (optional)
Instructions:
- Rinse the jasmine rice until the water runs clear, then drain well.
- In a rice cooker or pot, combine the rinsed rice, coconut milk, water, pandan leaf (if using), and a pinch of salt. Cook the rice according to your rice cooker's instructions or bring to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and fluffy.
- While the rice is cooking, prepare the sambal. In a blender or food processor, blend the soaked and deseeded dried red chilies, shallots, garlic, and soaked dried shrimp until smooth.
- Heat some oil in a pan over medium heat. Add the blended chili mixture and cook, stirring frequently, until fragrant and the oil starts to separate, about 10-15 minutes.
- Stir in the tamarind water, palm sugar, and salt to taste. Continue to cook until the sambal thickens slightly. Adjust seasoning if needed, then set aside.
- Once the rice is cooked, fluff it with a fork and remove the pandan leaf if used.
- Serve the nasi lemak with the sambal, hard-boiled eggs, cucumber slices, fried anchovies, fried peanuts, sliced fresh tomatoes, sliced fresh cucumbers, and fried chicken or fish if desired.
