Nasu no Agebitashi is a flavorful Japanese dish featuring crispy deep-fried eggplant soaked in a savory soy-based sauce. It’s a delicious way to enjoy the tender, rich taste of eggplant.

🍜 **Ingredients**:
- 2 large eggplants, sliced into rounds
- Vegetable oil (for frying)
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1 tbsp sugar
- 1/4 cup dashi or water
- Sesame seeds and chopped green onions (for garnish)

🍜 **Instructions**:
1. Heat oil in a deep pan or fryer to 350°F (175°C).
2. Fry eggplant slices in batches until golden and crispy, about 3-4 minutes per side.
3. Drain on paper towels and set aside.
4. In a bowl, mix soy sauce, mirin, sugar, and dashi or water.
5. Soak the fried eggplant slices in the sauce for a few minutes to absorb the flavors.
