- 1/4 cup mirin
- 2 tbsp sugar

**Instructions**:
1. Combine soy sauce, mirin, sugar, and dashi or water in a pot.
2. Add eggplant slices and bring to a simmer over medium heat.
3. Cook until eggplant is tender and the sauce has reduced, about 10-15 minutes.
