Nasu no Tsukudani is a flavorful Japanese pickled eggplant dish, simmered in a sweet and savory sauce. It’s a delightful condiment or side dish that pairs well with rice.

🍽️ **Ingredients**:
- 2 large eggplants, sliced into bite-sized pieces
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sugar
- 1/4 cup dashi or water
- 1 tbsp rice vinegar (optional, for extra tang)

🍽️ **Instructions**:
1. Combine soy sauce, mirin, sugar, and dashi or water in a pot.
2. Add eggplant slices and bring to a simmer over medium heat.
