Nasu no Tsumire is a delightful Japanese dish featuring eggplant stuffed with a savory filling, then simmered in a flavorful sauce. It’s a hearty and satisfying way to enjoy eggplant.

🍽️ **Ingredients**:
- 2 large eggplants
- 200g ground pork or beef
- 1/4 cup chopped onions
- 1 clove garlic, minced
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake (optional)
- 1/2 cup dashi or water
- 1 tbsp vegetable oil

🍽️ **Instructions**:
1. Cut the tops off the eggplants and hollow out the centers, leaving a thin wall.
2. In a pan, heat vegetable oil and sauté onions and garlic until softened.
3. Add ground meat and cook until browned, then stir in soy sauce, mirin, and sake (if using).
4. Stuff the eggplants with the meat mixture.
5. Place the stuffed eggplants in a pot and add dashi or water.
6. Simmer over medium heat for 20-25 minutes, or until eggplant is tender and the filling is cooked through.
7. Serve hot and enjoy the savory, flavorful Nasu no Tsumire!
