Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1/2 cup water (adjust as needed)
- A pinch of salt
- 1/2 lb ground meat (chicken, pork, or lamb)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1/2 cup finely chopped cabbage
- 1/4 cup finely chopped cilantro
- 1 tbsp soy sauce
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 medium tomatoes, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 dried red chilies
- 1 tsp sesame seeds
- 1 tbsp oil
- Salt to taste
- Fresh cilantro for garnish
- Prepare the dough: In a large bowl, mix the flour and a pinch of salt. Gradually add water and knead until you have a smooth, elastic dough. Cover and let it rest for about 30 minutes.
- Make the filling: In a mixing bowl, combine the ground meat, chopped onion, garlic, ginger, cabbage, cilantro, soy sauce, ground cumin, salt, and pepper. Mix well until everything is evenly combined.
- Form the momos: Divide the dough into small balls (about the size of a walnut). Roll each ball into a thin, round wrapper. Place a spoonful of filling in the center of each wrapper. Fold the edges and pinch them together to seal the dumpling. You can use various folding techniques to create different shapes.
- Cook the momos: Steam the momos in a steamer for about 10-12 minutes, or until the dough is cooked and the filling is hot.
- Prepare the dipping sauce: Heat oil in a pan and sauté garlic, ginger, dried red chilies, and sesame seeds until fragrant. Add chopped tomatoes and cook until they soften. Blend the mixture into a smooth sauce and add salt to taste. Garnish with fresh cilantro.
- Serve: Enjoy your momos hot, with the dipping sauce on the side.
