For the dough:

  • 2 cloves garlic, minced
  • 1 inch ginger, minced

  • 1 tbsp soy sauce

  • 2 medium tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 dried red chilies
  • 1 tsp sesame seeds
  • 1 tbsp oil
  • Salt to taste
  • Fresh cilantro for garnish

  1. Prepare the dough: In a large bowl, mix the flour and a pinch of salt. Gradually add water and knead until you have a smooth, elastic dough. Cover and let it rest for about 30 minutes.
  2. Make the filling: In a mixing bowl, combine the ground meat, chopped onion, garlic, ginger, cabbage, cilantro, soy sauce, ground cumin, salt, and pepper. Mix well until everything is evenly combined.
  3. Form the momos: Divide the dough into small balls (about the size of a walnut). Roll each ball into a thin, round wrapper. Place a spoonful of filling in the center of each wrapper. Fold the edges and pinch them together to seal the dumpling. You can use various folding techniques to create different shapes.
  4. Cook the momos: Steam the momos in a steamer for about 10-12 minutes, or until the dough is cooked and the filling is hot.
  5. Prepare the dipping sauce: Heat oil in a pan and sauté garlic, ginger, dried red chilies, and sesame seeds until fragrant. Add chopped tomatoes and cook until they soften. Blend the mixture into a smooth sauce and add salt to taste. Garnish with fresh cilantro.
