I recently made Nepali Aloo Tama, and it was a wonderfully unique culinary experience! This traditional dish features potatoes (aloo) and bamboo shoots (tama) cooked together in a flavorful sauce, often spiced with a mix of aromatic spices. Aloo Tama is a delightful vegetarian option that beautifully balances flavors and textures, making it a favorite in Nepali households. Here’s how you can make this delicious dish at home:

Ingredients:​

  • For the Aloo Tama:
    • 2 large potatoes, peeled and cubed
    • 1 cup bamboo shoots (canned or fresh, sliced)
    • 1 large onion, finely chopped
    • 2-3 green chilies, slit (adjust to taste)
    • 2 tablespoons vegetable oil
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 1 teaspoon turmeric powder
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander powder
    • 1/2 teaspoon red chili powder (adjust to taste)
    • Salt, to taste
    • Fresh cilantro, chopped (for garnish)

Instructions:​

1. Sauté the Aromatics:​

  • Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  • Add the chopped onion and sauté until golden brown, about 5-7 minutes. Stir in the ginger and garlic pastes, cooking for another minute until the raw smell disappears.

2. Add the Spices:​

  • Mix in the turmeric powder, coriander powder, and red chili powder, stirring to combine. Cook for another minute to toast the spices.

3. Add Potatoes and Bamboo Shoots:​

  • Add the cubed potatoes and bamboo shoots to the pot. Stir well to coat the vegetables with the spice mixture.
  • Pour in about 1-2 cups of water (enough to cover the vegetables) and season with salt.

4. Cook the Aloo Tama:​

  • Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the potatoes are tender and cooked through. Stir occasionally and add more water if needed to keep it saucy.

5. Garnish and Serve:​

  • Once the potatoes are cooked, taste and adjust the seasoning if necessary. Remove from heat and garnish with freshly chopped cilantro.
