Ingredients:​

  • 2 cups grated fresh coconut (or unsweetened shredded coconut)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)

Instructions:​

  1. Prepare the Sugar Syrup: In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves. Allow the mixture to boil until it reaches a hard-ball stage (about 250°F or 120°C on a candy thermometer).
  2. Add Coconut: Stir in the grated coconut and salt. Continue to cook, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan (about 5-10 minutes).
  3. Optional - Vanilla: If using vanilla extract, stir it in once the mixture is thickened.
  4. Cool and Shape: Pour the mixture onto a greased or parchment-lined baking sheet. Spread it out into an even layer. Allow it to cool slightly until it's safe to handle. While still warm, use a knife or spatula to cut into pieces or shape as desired.
  5. Let Set: Allow the candy to cool completely before breaking into pieces.
