  • 4 cups water

  • 1 teaspoon cinnamon

  • 1 tablespoon lemon juice
  • 1/4 cup raisins (optional)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Chopped nuts (such as walnuts or almonds) for garnish (optional)

Instructions​

  1. Cook the Apples: In a large pot, combine the diced apples, water, sugar, cinnamon, nutmeg, and lemon juice. Bring to a boil over medium heat.
  2. Simmer: Reduce the heat and let it simmer for about 15-20 minutes, or until the apples are soft.
  3. Blend (Optional): For a smoother texture, use an immersion blender to puree the soup to your desired consistency. Alternatively, you can leave it chunky.
  4. Thicken (Optional): If you prefer a thicker soup, mix the cornstarch with a little cold water to create a slurry, then stir it into the soup and cook for an additional 5 minutes until thickened.
  5. Add Raisins: If using, stir in the raisins and let the soup simmer for a few more minutes.
  6. Serve: Ladle the soup into bowls and garnish with chopped nuts if desired. It can be served warm or chilled.
