Oatmeal Raisin Cookie Granola Bars Recipe
Ingredients:
- 2 ¼ cups old-fashioned rolled oats (quick oats work too, see notes)
- ½ cup all-purpose flour
- ½ teaspoon kosher salt
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- 1 cup very ripe mashed banana (about 2 medium bananas)
- ½ cup maple syrup
- 1 cup raisins
- Preheat your oven to 350°F (175°C).
- Grease a 9 x 9 inch square baking pan and set aside.
- In a large bowl, whisk together the oats, flour, salt, baking powder, and cinnamon.
- Mix in the mashed banana and maple syrup until well combined.
- Fold in the raisins, breaking up any clumps if needed.
- Transfer the mixture into the greased pan, pressing it down evenly with your hands or the back of a spoon.
- Bake for 25-30 minutes, until the top is firm and golden brown, with darker edges.
- Allow to cool before cutting into squares. Store in the fridge or freezer.
