- 4 large eggs
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon rum extract
- Caramel Frosting
- Prepare:
- Preheat your oven to 350°F.
- In a small bowl, combine the sour cream and milk. Set aside.
- Cream Butter and Sugar:
- Using an electric mixer, beat the softened butter at medium speed until it becomes creamy.
- Gradually add the sugar, continuing to beat well.
- Add the eggs one at a time, beating thoroughly after each addition.
- Finish Batter and Add to Pans:
- In a separate bowl, combine the flour, baking powder, and salt.
- Alternately add the flour mixture and the sour cream mixture to the butter mixture, starting and ending with the flour mixture. Beat at medium-low speed until blended after each addition.
- Stir in the vanilla and rum extracts.
- Pour the batter into 2 greased and floured 9-inch round cake pans.
- Bake Cake Layers:
- Bake in the preheated oven for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean.
- Cool the cake layers in the pans on wire racks for 10 minutes.
- Remove the cakes from the pans and let them cool completely on wire racks, about 2 hours.
- Frost Cake Layers:
- Once the cake layers are completely cool, spread the Caramel Frosting between the layers, as well as on the top and sides of the cake.
