Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup extra-virgin olive oil
- 3/4 cup milk
- Zest of 1 lemon
- 2 tablespoons lemon juice
- Powdered sugar, for dusting

Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. In a separate bowl, beat the eggs until light and frothy. Gradually whisk in the olive oil, followed by the milk, lemon zest, and lemon juice.
4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
6. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
8. Dust the cooled cake with powdered sugar before serving, if desired.
