Ingredients:
- 2 large onions
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup milk
- 1 egg
- 1 cup breadcrumbs (panko for extra crunch)
- Vegetable oil (for frying)
- Optional: additional seasonings (e.g., garlic powder, paprika, cayenne pepper)
Instructions:
- Prepare the Onions:
- Slice the onions into 1/4-inch thick rings and separate them.
- Make the Batter:
- In a medium bowl, combine the flour, baking powder, and salt.
- In another bowl, whisk together the milk and egg.
- Combine the wet and dry ingredients, mixing until smooth. For added flavor, you can mix in seasonings like garlic powder, paprika, or cayenne pepper at this stage.
- Coat the Onions:
- Place the breadcrumbs in a shallow dish.
- Dip each onion ring into the batter, allowing any excess to drip off, then coat them with breadcrumbs.
- Heat the Oil:
- Heat the vegetable oil in a deep fryer or a large pot to 375°F (190°C). Ensure there's enough oil to fully submerge the onion rings.
- Fry the Onion Rings:
- Carefully place a few battered onion rings into the hot oil. Fry them in batches to avoid overcrowding.
- Fry until golden brown and crispy, about 2-3 minutes per side.
- Remove the onion rings with a slotted spoon and drain them on paper towels.
- Serve:
- Serve immediately, optionally with dipping sauces like ketchup, ranch dressing, or a spicy aioli.
Tips:
- For an extra crispy texture, double-dip the onion rings: dip them in the batter, then breadcrumbs, back into the batter, and once more into the breadcrumbs before frying.
- Ensure the oil is hot enough before frying to prevent soggy rings.
- Season the onion rings with a little salt right after frying while they're still hot.
