- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup fresh orange juice
- Zest of 1 orange
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 2-3 tablespoons fresh orange juice
- Optional: sliced almonds and orange zest
Instructions
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan, or line it with parchment paper.
- Make the Cake Batter:
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Mix in the orange juice and orange zest.
- In another bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Bake the Cake:
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Orange Glaze:
- In a small bowl, mix the powdered sugar with 2 tablespoons of orange juice. Adjust the consistency by adding more orange juice if needed.
- Glaze and Garnish:
- Drizzle the orange glaze over the cooled cake.
- Garnish with sliced almonds and additional orange zest if desired.
