Oyakodon is a comforting Japanese dish featuring tender chicken and eggs simmered in a savory sauce, served over a bowl of rice. It’s a satisfying and easy meal.
**Ingredients**:
- 2 boneless chicken thighs, cut into bite-sized pieces
- 2 eggs, lightly beaten
- 1 onion, thinly sliced
- 1 cup dashi or chicken broth
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sugar
- 2 cups cooked rice
- Chopped green onions (for garnish)
**Instructions**:
1. In a skillet, combine dashi or broth, soy sauce, mirin, and sugar. Bring to a simmer.
2. Add onion and cook until softened.
3. Add chicken pieces and cook until no longer pink.
4. Pour beaten eggs over the chicken and cover the skillet. Cook until eggs are just set.
5. Serve the chicken and egg mixture over a bowl of hot rice.
