🛒 Ingredients:

  • 200g dried glass noodles (bean thread noodles)
  • 200g shrimp, peeled and deveined (can substitute with chicken, tofu, or vegetables)
  • 2 eggs, lightly beaten
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced (any color)
  • 1 cup cabbage, shredded
  • 1-2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon ground white pepper
  • Handful of fresh cilantro leaves, for garnish
  • Lime wedges, for serving

🍲 Instructions:

  1. Prepare the Glass Noodles:
    • Soak dried glass noodles in hot water for about 10 minutes, or until softened. Drain and set aside.
  2. Stir-Fry the Protein:
    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
    • Add shrimp (or your choice of protein) and stir-fry until cooked through. Remove from pan and set aside.
  3. Cook the Vegetables:
    • In the same pan, heat the remaining tablespoon of vegetable oil.
    • Add minced garlic and sliced onion. Sauté until fragrant and onions are translucent.
  4. Combine Ingredients:
    • Push the vegetables to one side of the pan. Pour beaten eggs into the empty space and scramble until cooked.
  5. Add Noodles and Sauce:
    • Add softened glass noodles to the pan. Stir-fry for 1-2 minutes to combine with the vegetables and eggs.
    • Mix soy sauce, oyster sauce, fish sauce, sugar, and ground white pepper in a small bowl. Pour over the noodles and toss to coat evenly.
  6. Final Touches:
    • Return cooked shrimp (or protein) to the pan. Add julienned carrot, sliced bell pepper, shredded cabbage, and chopped green onions. Toss everything together and stir-fry for another 2-3 minutes, or until vegetables are tender and noodles are heated through.
  7. Serve:
    • Transfer Pad Woon Sen to a serving dish.
    • Garnish with fresh cilantro leaves and serve hot with lime wedges on the side for squeezing over the noodles.
