Hey everyone! I wanted to share one of my favorite weeknight recipes—Pan Baked Chicken. It’s super simple, flavorful, and doesn’t require a ton of cleanup. I make it all the time when I’m craving something hearty but don’t feel like spending hours in the kitchen.

Ingredients:​

  • 4 bone-in, skin-on chicken thighs (or breasts, if you prefer!)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 lemon (sliced into rounds)
  • 2 cups mixed veggies (I usually go with baby potatoes, carrots, and green beans)

Instructions:​

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the paprika, garlic powder, onion powder, thyme, salt, and pepper.
  3. Rub the chicken with olive oil and season generously with the spice mix.
  4. Heat a cast-iron skillet or oven-safe pan over medium heat. Sear the chicken skin-side down until golden and crispy (about 3–4 minutes).
  5. Flip the chicken, add the veggies to the pan, and toss them with a little olive oil, salt, and pepper.
  6. Lay lemon slices on top of the chicken and veggies.
  7. Transfer the pan to the oven and bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Let it rest for 5 minutes before serving.
