Ingredients:

For the chicken:
- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 cup cornstarch
- 2 eggs, beaten
- Salt and pepper to taste
- Vegetable oil for frying

- 1 cup orange juice (preferably freshly squeezed)
- Zest of 1 orange
- 1/2 cup sugar
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
- 1 clove garlic, minced
- 1 tsp ginger, grated
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- 1/2 tsp red pepper flakes (optional, for a bit of heat)

Instructions:

1. Prepare the Chicken:
1. Season the chicken pieces with salt and pepper.
2. In a bowl, mix the flour and cornstarch.
3. Dip the chicken pieces into the beaten eggs, then coat them in the flour-cornstarch mixture.

2. Fry the Chicken:
1. Heat vegetable oil in a large pan or wok over medium-high heat.
2. Fry the chicken pieces in batches until golden brown and crispy, about 5-7 minutes.
3. Remove the chicken and place on paper towels to drain excess oil.

3. Make the Sauce:
1. In a saucepan, combine the orange juice, orange zest, sugar, rice vinegar, soy sauce, garlic, and ginger.
2. Bring to a boil, then reduce the heat and simmer for 5 minutes.
3. Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.
4. Add the red pepper flakes if you like a bit of spice.

4. Combine and Serve:
1. Toss the fried chicken pieces in the orange sauce until well coated.
2. Serve immediately over steamed rice and garnish with chopped green onions or sesame seeds if desired.
