  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs, separated
  • 1/2 cup coconut milk
  • 1 teaspoon pandan extract
  • Green food coloring (optional, for enhanced color)

    Instructions:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, sift together cake flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the egg yolks one at a time, beating well after each addition.
  5. Mix in the coconut milk and pandan extract until well combined. If desired, add a few drops of green food coloring for a more vibrant color.
  6. Gradually add the sifted dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  7. In another clean bowl, beat the egg whites until stiff peaks form.
  8. Gently fold the beaten egg whites into the batter until evenly incorporated. Be careful not to deflate the mixture.
  9. Pour the batter into the prepared cake pan and spread it out evenly.
  10. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  12. Once cooled, slice and serve the Pandan Cake as desired. Enjoy its light and fragrant flavor!
