- 1 cup cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs, separated
- 1/2 cup coconut milk
- 1 teaspoon pandan extract
- Green food coloring (optional, for enhanced color)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, sift together cake flour, baking powder, and salt. Set aside.
- In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg yolks one at a time, beating well after each addition.
- Mix in the coconut milk and pandan extract until well combined. If desired, add a few drops of green food coloring for a more vibrant color.
- Gradually add the sifted dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- In another clean bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the batter until evenly incorporated. Be careful not to deflate the mixture.
- Pour the batter into the prepared cake pan and spread it out evenly.
- Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
