- 1 pound parsnips, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or rosemary
- 2 cloves garlic, minced (optional)
- Fresh parsley, chopped (for garnish, optional)
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare Parsnips: In a large bowl, toss the parsnip sticks with olive oil, salt, pepper, dried thyme or rosemary, and minced garlic (if using) until well coated.
- Arrange on Baking Sheet: Spread the parsnips in a single layer on the prepared baking sheet.
- Roast: Roast in the preheated oven for 25-30 minutes, turning halfway through, until the parsnips are golden brown and tender.
- Serve: Remove from the oven and garnish with fresh parsley if desired. Serve hot as a delicious side dish.
