Cozy up with a warm bowl of homemade Pea & Ham Soup! 
This comforting classic is packed with tender peas, savory ham, and aromatic herbs, making it the perfect meal to enjoy on chilly days.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups diced ham
- 3 cups green peas (fresh or frozen)
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
2. Add diced ham to the pot, stirring occasionally until lightly browned.
3. Pour in chicken or vegetable broth, add green peas, and dried thyme. Bring the mixture to a simmer.
4. Let the soup simmer for about 20-25 minutes, or until peas are tender.
5. Using an immersion blender or regular blender, blend the soup until smooth.
6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley. Enjoy!
